GLUTEN FREE VERSION: Read labels carefully, heavy cream, ham and cheese can all contain gluten. VEGETARIAN VERSION: Omit ham.
- Preheat oven to 350 degrees. Whisk together eggs, cream, ham, 1 teaspoon of salt, and ½ teaspoon pepper.
- Melt the butter in a 10 inch nonstick skillet, add the broccoli, red onion, and tomatoes, cook for 2 minutes.
- Reduce the heat and add the egg mixture over the vegetables. Add the cheese and bake for 15 minutes. Let cool before cutting and serve!
