Beef Kebab with Harissa Sauce

  • 1 lb ground beef
  • 1 eggs
  • 1 finely chopped medium yellow onion
  • 2 minced garlic cloves
  • 1 tbsp extra virgin olive oil
  • 2 tbsp finely chopped parsley
  • 2 tbsp finely chopped cilantro
  • 2 tbsp tomato paste
  • 1/4 cup Harissa paste
  • 2 tbsp honey
  • 2 tbsp lemon juice
  • 2 tbsp extra virgin olive oil
  • ground pepper and salt
  • 6-inch bamboo skewer

  1. Sauté onion in 1 T olive oil over medium heat until soft, add garlic and cook for one minute, set aside to cool.
  2. Thoroughly mix beef, egg, parsley, cilantro, tomato paste, onion, garlic, salt and pepper.
  3. Form 3-inch long, 1-inch wide kebabs on skewers and grill over medium flame, or bake on a sheet tray at 400° F, until beef reaches an internal temperature of 160° F.
  4. For sauce, mix Harissa paste, honey, lemon juice, olive oil, and salt and pepper to taste.
