Ingredients

  • 1 lb. ground beef
  • 1/2 cup chopped onion (about 1 medium)
  • 1 (8-oz.) can tomato sauce
  • 1/2 tsp. Italian seasoning (optional)
  • 8 oz. medium egg noodles (2 cups)
  • 1 (15.25-oz.) can sweet corn, drained
  • 1 (6.5-oz.) jar sliced ripe olives, drained
  • 1 cup shredded sharp Cheddar (4 oz.)

  1. Preheat oven to 350°F. Coat a 2-quart square baking dish with nonstick cooking spray; set aside.
  2. In a large deep skillet cook and stir ground beef and onion over medium heat until meat is browned and onion is tender. Drain fat. Stir in tomato sauce and 1 1/2 cups water. Add Italian seasoning, if desired. Bring to boiling; reduce heat. Stir in noodles. Cover and simmer 5 minutes or until noodles are al dente. Stir in corn and olives. Season with salt and pepper to taste.
  3. Transfer mixture to prepared baking dish. Cover and bake 15 to 20 minutes or until heated through. Remove from oven. Uncover baking dish and sprinkle with cheese. Bake, uncovered, 5 minutes more or until cheese is melted. Let stand 5 minutes before serving.
