Bush's Black Bean Fiesta Chicken and Rice Bake

Ingredients

  • 1 Rotisserie chicken, deboned and chopped
  • 1 ½ cups instant white or brown rice
  • 2 cans (15.5 ounces) BUSH'S® Black Bean Fiesta™ Beans
  • 1 can (11 ounces) corn and peppers, drained
  • 1 can (10 ounces) red enchilada sauce
  • 2 cups (16 ounces) Mexican Style shredded cheese, divided

  1. Preheat oven to 400 degrees F.
  2. Spray a 9”x13” baking dish with cooking spray.
  3. In a large bowl mix the first six ingredients with 1 cup of shredded cheese.
  4. Spread mixture evenly into baking dish and top with remaining one cup of cheese.
  5. Bake for 25-30 minutes until heated through and cheese is melted and bubbly.
