Ingredients

  • 1 tbsp. olive oil
  • 1/4 red onion, cut into thin wedges
  • 1/2 yellow bell pepper, seeded, cut into strips
  • 1/2 red bell pepper, seeded, cut into strips
  • 1 garlic clove, minced
  • 1 lb. fresh okra, trimmed, cut into 1-inch slices
  • 1 1/2 tsp. fresh thyme
  • 1/3 cup chicken broth

  1. Preheat grill to medium (300°F to 350°F). Place a cast iron skillet on grill; Heat oil in skillet. Add onion, bell pepper strips and garlic to hot oil; cook and stir 1 minute. Add okra, thyme and broth; toss lightly to mix.
  2. Heat until broth is steaming. Cover and cook 10 minutes . Season with salt and pepper to taste, and serve.
