Cedar Plank Grilled Whitefish with Fresh Peach Salsa

Ingredients

  • 2 lbs. Whitefish fillets, skin on and bones removed (4-6 fillets)
  • Cedar grilling planks, pre-soaked in water
  • 6 to 8 Ripe Peaches, skins & pits removed
  • Red Onion, small dice
  • 1/2 bunch Cilantro, chopped
  • 1 Lime, juiced & zested
  • 1 Jalapeno Pepper, seeds removed & diced (adjust to taste)
  • 1/4 cup OUR FAMILY BBQ sauce

Directions

  1. Pre-heat grill on medium-high heat.
  2. Start by cutting peaches into a medium dice. Add to a mixing bowl with remaining additional salsa ingredients.
  3. Set aside to place cleaned whitefish fillets on the grilling planks and put directly on the grill. As the plank begins to smoke, lightly brush with BBQ sauce and close the grill. Let cook to an internal temperature of 145 degrees (roughly 5 minutes).
  4. Remove from grill, and transfer fish to serving vessel. Top with peach salsa and enjoy!
