Chili-Rubbed Strip Steaks with Corn Relish

Ingredients

  • 3 tbsp. olive oil
  • 2 tbsp. fresh lime juice
  • 2 1/2 tbsp. light brown sugar
  • 4 tsp. chili powder
  • 1 tbsp. paprika
  • 3/4 tsp. garlic powder
  • 3 ears of corn, husked
  • 4 (10-oz.) New York strip steaks
  • 2 Roma (plum) tomatoes, diced
  • 1/3 cup diced red onion
  • 2 tbsp. chopped fresh cilantro and parsley

  1. Coat grill rack with nonstick cooking spray. Preheat grill to high (400°F). In a small bowl combine oil and lime juice. In another small bowl combine brown sugar, chili powder, paprika and garlic powder. Brush corn with lime juice mixture, then coat with sugar mixture. Reserve remaining lime juice mixture.
  2. Rub both sides of steaks with remaining sugar mixture. Place steaks and corn on grill. Grill, uncovered, to desired doneness, turning once halfway through cooking (11 to 16 minutes for rare to medium steaks, 11 minutes for corn). Remove from grill; cover steaks to keep warm.
  3. For the corn relish, cut grilled corn kernels from cobs into a medium bowl. Add reserved lime juice mixture plus tomatoes, onion, cilantro, parsley, and salt to taste; toss. Serve steaks with corn relish.
