Chipotle Lime Tri Tip

  • 1 Each Whole Beef Tri Tip, 2-2 ½ lbs
  • 4 Each Chipotle chiles in adobo sauce (canned)
  • 1 Tbsp Adobo sauce, from the canned chiles
  • 4 Each Garlic cloves, smashed
  • ½ cup Fresh lime juice (about 5 limes)
  • ½ cup Full Circle Olive oil
  • ¼ cup Our Family Honey
  • 2 tsp Kosher salt
  • 1 tsp Our Family Fresh ground pepper


  1. In a blender, combine all ingredients. Blend for 10 seconds. Pour over Tri Tip and let marinade for a minimum of 6 hours or up to 24 hours
  2. Remove from marinade and prepare your grill. Pre-heat your grill with medium-high heat.
  3. Grill Tri-tip on all sides before reducing your flame to low setting to finish cooking to doneness (approx. 12-15 minutes).
  4. Remove from heat and let rest for 20-30 minutes before slicing.
  5. Using a carving knife, slice starting at the “tip” very thin slices making sure you are cutting against the grain. Serve with your favorite taco combinations.
