Ingredients

  • Apple Salsa:
  • 1 small apple, cored and diced (1 1/2 cups)
  • 2 tbsp. fresh lime juice
  • 3 tbsp. chopped fresh cilantro
  • 2 tbsp. finely chopped red onion
  • 1 tbsp. finely chopped jalapeño pepperâ?
  • 1/2 tsp. cinnamon-chipotle rub
  • Chipotle Pork Chops:
  • 3 tbsp. cinnamon-chipotle rub
  • 6 (4-oz.) boneless pork loin chops, 1/2-inch thick

  1. For Apple Salsa: In a medium bowl combine diced apple and lime juice. Add cilantro, onion, jalapeno and cinnamon rub; mix well. Season with salt to taste. Cover; refrigerate until ready to serve.
  2. For Chipotle Pork Chops: Sprinkle cinnamon rub on both sides of chops; cover and refrigerate 30 minutes.
  3. Coat grill rack with nonstick cooking spray. Preheat grill to medium (300 to 350 degrees). Place chops on grill; grill 3 to 4 minutes per side for medium (145 degrees) or to desired doneness. Remove from grill; let stand 3 minutes. Serve with Apple Salsa.
