- For Apple Salsa: In a medium bowl combine diced apple and lime juice. Add cilantro, onion, jalapeno and cinnamon rub; mix well. Season with salt to taste. Cover; refrigerate until ready to serve.
- For Chipotle Pork Chops: Sprinkle cinnamon rub on both sides of chops; cover and refrigerate 30 minutes.
- Coat grill rack with nonstick cooking spray. Preheat grill to medium (300 to 350 degrees). Place chops on grill; grill 3 to 4 minutes per side for medium (145 degrees) or to desired doneness. Remove from grill; let stand 3 minutes. Serve with Apple Salsa.
