Ingredients

  • Orange?Citrus Dressing:
  • 1 large orange, peeled and sectioned
  • 1/4 cup honey
  • 2 tbsp. fresh lemon juice
  • 2 tbsp. extra virgin olive oil
  • 2 tbsp. chopped shallots
  • 1 tsp. ground ginger
  • Confetti Salad:
  • 1 (10-oz.) pkg. matchstick carrots
  • 1/2 cup matchstick green bell pepper
  • 1/2 cup matchstick red bell pepper
  • 1 large grapefruit, peeled and sectioned
  • 2 large green onions, thinly sliced
  • 6 radicchio leaves

  1. For the dressing, in a blender combine orange sections, honey, lemon juice, oil, shallots and ginger; blend until smooth. Season with pepper to taste. Cover and refrigerate until serving time.
  2. For the salad, in a large bowl combine carrots, bell peppers, grapefruit and green onions. Add 1?2 cup of the dressing; toss to coat. Season with pepper to taste.
  3. Place 1 radicchio leaf on each of 6 salad plates. Spoon 3?4 cup of the salad into each leaf. Serve with remaining dressing.
