- In a small bowl whisk together ranch dressing mix and 1/2 cup water; set aside. Season chicken with salt and pepper to taste. In a 3 1/2- or 4-quart slow cooker combine chicken, cream cheese, mushrooms and ranch dressing. Cook on HIGH 2 1/2 to 3 hours or until chicken is no longer pink (165°F).
- Meanwhile, cook rice according to package directions. Keep covered; set aside.
- Transfer chicken to a serving platter. Whisk sauce in slow cooker until smooth. Season with salt and pepper to taste. Spoon sauce over chicken. If desired, garnish with chives. Serve chicken and sauce over rice.
