Ingredients

  • 1 medium cucumber, seeded and cut into -inch cubes
  • 2 Roma tomatoes, cut into -inch cubes
  • 2 tbsp. chopped fresh dill
  • 2 tbsp. finely chopped red onion
  • 1/4 tsp. garlic pepper
  • 1 (8-oz.) baguette, cut into 24 (1/2-inch) slices
  • Extra virgin olive oil
  • 1 (5.3-oz.) pkg. spreadable herb cheese
  • Fresh dill sprigs

  1. In a small bowl combine cucumber, tomatoes, chopped dill, onion and garlic pepper; mix well.
  2. Preheat grill to medium (300°F to 350°F). Brush baguette slices with oil; place on grill. Grill until bread is lightly marked on both sides.
  3. Spread each baguette slice with herb cheese. Top evenly with cucumber mixture. Top with dill sprigs, and serve.
