Ingredients

  • 6 large or 10 medium fresh peaches
  • 1 tbsp. fresh lemon juice
  • 2 cartons lowfat vanilla yogurt
  • 1 tsp. finely grated lemon peel
  • 1 angel food cake
  • Additional peach slices (optional)

  1. Peel peaches and thinly slice. Place in a medium bowl; add lemon juice, and toss.
  2. Place 1 1/2 cups of the peach slices in a blender; blend until smooth. Stir in yogurt and lemon peel; set aside.
  3. Cut cake into 1-inch cubes. Place enough cake cubes cubes in a trifle dish to cover bottom.
  4. Place half the remaining peach slices over cake cubes. Cover peaches with half the yogurt mixture. Repeat layers of cake, peaches and yogurt. Top with peach slices, if desired. Serve immediately, or cover and refrigerate until serving time.
