Ingredients

  • 1 cup peeled, diced jicama
  • 1 navel orange, peeled, sectioned and coarsely chopped
  • 1/4 cup finely chopped red bell pepper
  • 1 green onion, thinly sliced
  • 2 tsp. grated lime zest
  • 2 tbsp. fresh lime juice
  • 2 tsp. vegetable oil
  • 1 tsp. sugar

  1. In medium bowl a combine jicama, orange, bell pepper, onion, lime zest, juice, oil, sugar, and salt to taste; toss to combine. Cover and refrigerate at least 1 hour to combine flavors.
  2. Stir before serving. Serve with grilled chicken, pork or fish.
