Ingredients

  • 4 medium sweet potatoes, peeled, cut into 1 1/2-inch chunks
  • 1/2 cup quick-cooking rolled oats
  • 1/2 cup packed brown sugar
  • 3 tbsp. flour
  • 2 to 3 tbsp. butter, softened
  • 1 jar chunky applesauce
  • 1 tsp. ground cinnamon, divided
  • 1/4 tsp. ground nutmeg, divided

  1. In a large saucepan place sweet potatoes in enough boiling water to cover. Cook 10 to 12 minutes or just until tender; drain.
  2. Preheat oven to 375°F. Coat a square 2-quart baking dish with nonstick cooking spray. In a small bowl combine oats, brown sugar and flour. Using a fork, cut in butter until crumbly; set aside.
  3. Place half the applesauce in baking dish. Sprinkle with 1/2 teaspoon of the cinnamon and 1/8 teaspoon of the nutmeg. Top with 3 tablespoons of the oats mixture. Place sweet potatoes on oats mixture. Spoon remaining applesauce over sweet potatoes; sprinkle with remaining cinnamon and nutmeg. Top with remaining oats mixture.
  4. Bake, uncovered, 30 to 35 minutes or until heated through. Serve immediately.
