Greek Artichoke Salad

  • 1 can quartered, marinated artichoke hearts; drained
  • 4 oz. feta cheese, crumbled
  • 4 oz. Kalamata olives
  • 1/2 red pepper, chopped
  • 1/2 green pepper, chopped
  • 1/2 pint grape tomatoes
  • 1/2 red onion, chopped
  • 1/4 cup olive oil
  • 2 tbsp. wine vinegar
  • 1 tsp. dried oregano
  • 1 tbsp. lemon juice

  1. In a small bowl, whisk together olive oil, vinegar, oregano and lemon juice.
  2. In a large mixing bowl, combine artichokes, feta cheese, Kalamata olives, red and green pepper, tomatoes, and onion. Combine the mix with the dressing, and serve with spring mix for a heart healthy salad.
