Ingredients

  • 4 large portobello mushroom caps
  • 4 tbsp. shredded lowfat Cheddar cheese
  • 4 tsp. chopped green onions
  • 4 tsp. chopped red bell peppers
  • 1 1/2 cups nonfat egg substitute

  1. Preheat grill to medium (300°F to 350°F). Remove stems (if any) from mushrooms, and scrape gills with a spoon.
  2. Place 1 tablespoon of the cheese, 1 teaspoon of the green onion and 1 teaspoon of the bell pepper into each mushroom cap. Season with salt and pepper to taste.
  3. Place mushroom caps on grill; fill each cap with egg substitute. Grill, covered, 25 minutes or until egg is set. Serve immediately.
