Ingredients

  • 4 (10-inch) flour tortillas
  • 1/2 cup crumbled blue cheese (2 oz.), divided
  • 1/2 (8-oz.) pkg. whole-milk mozzarella, thinly sliced
  • 1 medium red tomato, seeded and sliced
  • 1 medium yellow tomato, seeded and sliced
  • 2 thin red onion slices, separated into rings
  • 3 tbsp. chopped almonds

  1. Preheat grill to medium (300°F to 350°F). Coat 2 tortillas with nonstick cooking spray, and place coated side down on a baking sheet. Layer each with one-fourth of the blue cheese and one-fourth of the mozzarella. Top each with half of the tomato slices, onion rings and almonds. Top evenly with remaining mozzarella and blue cheese. Cover with remaining 2 tortillas and coat with nonstick cooking spray.
  2. Carefully slide quesadillas onto grill. Grill, covered, 2 to 4 minutes per side or until cheese melts, turning carefully with a wide spatula. Cut into wedges, and serve.
