- Preheat grill to medium (300°F to 350°F). Coat 2 tortillas with nonstick cooking spray, and place coated side down on a baking sheet. Layer each with one-fourth of the blue cheese and one-fourth of the mozzarella. Top each with half of the tomato slices, onion rings and almonds. Top evenly with remaining mozzarella and blue cheese. Cover with remaining 2 tortillas and coat with nonstick cooking spray.
- Carefully slide quesadillas onto grill. Grill, covered, 2 to 4 minutes per side or until cheese melts, turning carefully with a wide spatula. Cut into wedges, and serve.
