Ingredients

  • 1 lb. extra-lean ground beef
  • 1/3 cup quick-cooking oats
  • 1/4 cup diced onion
  • 1/4 cup plus 2 tbsp. low-sodium ketchup, divided
  • 1 small carrot, peeled and grated
  • 1 garlic clove, minced
  • 2 tbsp. chopped fresh parsley
  • 2 egg whites
  • 1/4 tsp. salt
  • 1/4 tsp. pepper

  1. Preheat oven to 350°F. Line a baking pan with foil and coat with nonstick cooking spray. In a large bowl combine beef, oats, onion, 1?4 cup of the ketchup, carrot, garlic, parsley, egg whites, salt and pepper; mix well. Transfer to baking pan and shape into an 8x5-inch loaf. Spread remaining 2 tablespoons ketchup on the top of the loaf.
  2. Bake 45 minutes or until an instant-read thermometer registers 160°F. Remove from oven; cover loosely with foil and let stand 10 minutes before slicing.
