Ingredients

  • 1 1/2 lb. boneless, skinless chicken breast halves, cut into 1-inch pieces
  • Vegetable oil for frying
  • 1 egg, beaten
  • 1/2 cup lowfat milk
  • 1 1/4 cups flour
  • 2 tsp. lemon pepper
  • 1 tsp. paprika
  • 3/4 cup bottled sweet-and-sour sauce
  • 2 tbsp. reduced-fat mayonnaise

  1. In a resealable plastic bag combine flour, lemon pepper and paprika. Seal bag and shake to combine; set aside. In a shallow dish whisk together egg and milk. Season chicken pieces with salt and pepper to taste then dip in egg mixture. Add chicken pieces, a few at a time, to flour mixture. Seal bag and shake to coat.
  2. In a large deep skillet add oil to a depth of 1-inch; heat over medium heat to 375°F. Carefully add chicken pieces, a few at a time, and cook 5 to 8 minutes or until chicken is no longer pink (165°F). Drain on paper towels. Serve immediately with sauce for dipping.
  3. For sauce, in a small bowl stir together sweet-and-sour sauce and mayonnaise until combined; cover and set aside.
