Loaded Chicken Burger

Ingredients

  • CHICKEN BURGER
  • 2 lbs Ground chicken
  • 1/2 cup Onion, grated
  • 4 Garlic cloves, minced
  • 2 teaspoons Our Family Paprika
  • 1/2 cup cilantro, chopped
  • Liberal grinding salt and pepper
  • CHIPOTLE MAYO
  • 1/2 cup Our Family Mayonnaise
  • 1 Chipotle pepper in adobo sauce
  • 1 teaspoon Sriracha
  • 2 tablespoons Lime juice
  • 1 tablespoon Chopped cilantro
  • SMASHED AVOCADO
  • 1 Jalapeño, seeded and chopped
  • 2 tablespoons Red onion, chopped
  • 2 tablespoons Lime juice
  • 2 Avocados, peeled and coarsely smashed
  • 1 tablespoon Cilantro, chopped

Directions

  1. CHICKEN BURGER 1.) Combine all ingredients and mix together. Do not overmix 2.) Create 6 patties, refrigerate for at least 15 minutes to keep them from falling apart on the grill. 3.) Cook for 4-5 minutes each side.
  2. CHIPOTLE MAYO 1.) Combine all ingredients in a blender. Refrigerate until ready to serve.
  3. AVOCADO MASH 1.) Combine jalapeño, red onion and lime juice. 2.) Add avocados to mixture; coarsely smash them into chunks. 3.) Stir in cilantro.
  4. BURGER ASSEMBLY 1.) Add cooked burger to bun 2.) Top chicken burger with smashed avocado. 3.) Spread chipotle mayo on the inside of the other half of the bun and place on top of the smashed avocado mixture.
