Ingredients

  • Dressing:
  • 1 tbsp. adobo sauce
  • 1 tbsp. minced chipotle chile in adobo sauce
  • Juice of 1 lime
  • 1 tbsp. honey
  • 1 tsp. ground cumin
  • 1/4 cup canola oil
  • Salad:
  • 1 bag romaine salad mix
  • 1 can black beans, rinsed and drained
  • 1 can no-salt-added whole-kernel corn, rinsed and drained
  • 1 small red onion, thinly sliced
  • 1 avocado, pitted, peeled and diced
  • 1 cup diced chipotle-flavored or smoked Gouda

  1. For the dressing, in a medium bowl whisk together adobo sauce, chile, lime juice, honey and cumin. Whisking constantly, drizzle in oil, whisking until combined. Season with salt and pepper to taste. Set aside.
  2. In a salad bowl combine romaine, beans, corn, onion and avocado. Drizzle with dressing; toss to coat. Top with diced Gouda, and serve.
