- For the dressing, in a medium bowl whisk together adobo sauce, chile, lime juice, honey and cumin. Whisking constantly, drizzle in oil, whisking until combined. Season with salt and pepper to taste. Set aside.
- In a salad bowl combine romaine, beans, corn, onion and avocado. Drizzle with dressing; toss to coat. Top with diced Gouda, and serve.
