Mexican Grilled Corn Salad

Ingredients

  • 6 Each Ears of Sweet Corn, husked
  • 1/2 Cup Our Family Mayonnaise
  • 1/4 Cup Our Family Sour Cream
  • 1 Each Lime, zested and juiced
  • 1/2 tsp Cumin, ground
  • 1/2 Tbsp Chili powder
  • 1/4 tsp black pepper. Ground
  • 1/2 tsp Kosher Salt
  • 1/2 Cup Red Onions, diced
  • 1/2 Bunch Cilantro, rough chopped
  • 1/2 Cup Cotija Cheese (reserve some for garnish)

Directions

  1. Grill Corn on the cob on all sides and remove from grill. Let cool. Next, cut corn off the cob and place into mixing bowl. Combine all additional ingredients. Stir to combine. Garnish with Chopped Cilantro, Cotija cheese, lime wedges and chili powder.
