Ingredients

  • 1 lb. ground beef
  • 1 medium green bell pepper, seeded and chopped
  • 1 small onion, chopped
  • 1 (15-oz.) can tomato sauce
  • 1 (6-oz.) can tomato paste
  • 1 (1.25-oz.) pkg. taco seasoning
  • 2 cups shredded Mexican cheese blend (8 oz.), divided
  • 10 (7- to 8-inch) flour tortillas
  • 2 cups corn chips, slightly crushed
  • Sour cream, sliced green onions (optional)

  1. Preheat oven to 350°F. Coat a rectangular 3-quart baking dish with nonstick cooking spray. In a large nonstick skillet cook beef, bell pepper and onion over medium-high heat until beef is browned; drain fat. Stir in tomato sauce, tomato paste, 3/4 cup water and taco seasoning; bring to boiling. Reduce heat; simmer, uncovered, 5 minutes or until thickened.
  2. Reserve 1/2 cup of the cheese. Place 5 tortillas in baking dish. Top with half the beef mixture and half the remaining cheese. Repeat with remaining tortillas, beef and cheese. Bake, uncovered, 30 minutes or until bubbly.
  3. Remove from oven. Sprinkle evenly with corn chips and reserved 1/2 cup cheese. Bake 5 minutes more or until cheese melts. Top with sour cream and green onions (if desired), and serve.
