Ingredients

  • 8 oz. tri-color rotini pasta
  • 4 oz. Pepper Jack, cubed
  • 4 oz. sharp Cheddar, cubed
  • 4 oz. pepperoni, chopped
  • 1 large tomato, seeded and chopped
  • 1 small red bell pepper, chopped
  • 1 small yellow bell pepper, chopped
  • 1 small red onion, chopped
  • 1 cup bottled Italian salad dressing
  • 1 (0.6-oz.) pkg. dry zesty Italian salad dressing mix

  1. Cook pasta al dente according to package directions; drain. Rinse with cold water to cool completely; drain again.
  2. In a large bowl combine cooked pasta, cheeses, pepperoni, tomato, bell peppers and onion.
  3. In a small bowl whisk together bottled salad dressing and dry salad dressing mix until combined. Drizzle over pasta mixture; toss to coat. Season with salt and pepper to taste. Cover salad and refrigerate at least 30 minutes. Toss once more before serving.
