Pork Carnitas

A healthier version of classic Carnitas, but still packing in amazing flavor.

Ingredients

  • 2 lbs. Boneless pork shoulder
  • 1 cup Orange juice
  • 1 cup Whole milk
  • 3 Garlic cloves, lightly crushed
  • 1 Small bay leaf
  • 4 tbsp. Vegetable oil

  1. Cut pork into roughly 3" pieces, and season generously with salt on all sides. When cutting up the pork, leave all of the fat on, as this will be an important part of the cooking process.
  2. In a 6 quart slow cooker, arrange pork so there are very few gaps, you want the pork as tight as possible. add orange juice, milk, garlic cloves, and bay leaf. Cook on high for 3 hours.
  3. Remove pork from liquid, and shred into large pieces. Set aside
  4. When ready to serve, heat a large skillet set to medium-high, add enough oil to coat bottom of the pan and scoop in serving-sized amounts of pork. Cook for 2 minutes or until pork is crispy. Repeat until all pork for servings are crispy and serve immediately with corn tortillas, guacamole, and salsa.
