Pork Chops in Nopales Sauce

Ingredients

  • 2 tbsp. canola oil
  • 4 (8-oz.) bone-in pork chops
  • 1/3 cup beef broth or water
  • 2 cups salsa verde with jalapeños and tomatillos
  • 1 tsp. dried oregano
  • 2 garlic cloves, minced
  • 2 cups nopalitos, rinsed and drained

  1. Heat oil in a large skillet over high heat. Season chops with salt and pepper to taste. Add chops to skillet; cook, turning several times to brown evenly.
  2. Add broth, salsa verde, oregano and garlic to skillet. Stir to coat. Reduce heat to medium-low; cover and cook 30 minutes.
  3. Add nopalitos; cook 10 minutes more or until pork is cooked through (170°F) and tender.
