Rosemary-Roasted Garlic Strip Steaks

Ingredients

  • 4 New York strip steaks (about 2 1/2 lbs.)
  • 1 garlic bulb
  • 2 tsp. olive oil, divided
  • 1 tbsp. finely chopped fresh rosemary
  • 1/2 tsp. garlic pepper
  • 1/4 tsp. onion powder

  1. Preheat oven to 400°F. For the roasted garlic paste, peel away papery layers (do not separate cloves). Cut a thin slice from top of bulb, exposing tops of cloves. Place bulb cut side up in a small ovenproof bowl. Drizzle with 1 teaspoon of the oil; cover with foil.
  2. Bake 25 minutes or until the center is soft when pierced with a knife. Let cool slightly. Squeeze or scoop out garlic paste; discard skins. Mash garlic with a fork. (Can be refrigerated up to 2 days.)
  3. Preheat broiler. In a small bowl combine garlic paste, rosemary, garlic pepper, onion powder and remaining 1 teaspoon oil. Rub on both sides of steaks. Place steaks on broiler pan rack. Broil 6 to 9 minutes per side or to desired doneness. Remove from broiler; let stand 5 minutes before serving.
