Salmon Burritos

Ingredients

  • 2 Salmon Fillets
  • 2 Tbsp Mexican Seasoning: 1 tsp cumin, 1 tsp chili powder, 1 tsp onion, 1 tsp coriander
  • 1 diced Avocado
  • 2 Heads Romaine Lettuce
  • 2 diced Tomatoes
  • 2 diced Spring Onions (scallions)
  • 2 Tortillas
  • Sauce:
  • 1/2 cup Nonfat Plain Greek Yogurt
  • 1 Tbsp Lemon Juice
  • 1 Tsp Lemon Zest
  • Dash Dill
  • ½ Tsp Coriander

Directions

  1. Sprinkle the Mexican seasoning on the salmon and then put the salmon fillets in the oven at 350 for 10 minutes until cooked.
  2. In a large bowl, add the lettuce, avocado, tomato, lime juice, salt and pepper and mix well.
  3. Mix the yogurt, coriander, dill and lemon juice to make the sauce.
  4. Spread the creamy coriander sauce on the tortillas.
  5. Top with the salad.
  6. Flake the salmon and put on top of the salad.
  7. Wrap into a burrito and serve.
