Ingredients

  • 1 lb. ground beef
  • 1 1/2 tsp. ground cumin
  • 1 1/2 tsp. chili powder
  • 1/2 cup salsa
  • 8 hard or soft corn tortillas, warmed according to package directions
  • 1 cup shredded lettuce
  • 1 cup shredded Pepper Jack or Cheddar (4 oz.)
  • Toppings (optional): Cilantro, salsa, sour cream
  • 1/2 cup diced Roma (plum) tomatoes
  • 1/4 cup finely diced red onion

  1. In a large nonstick skillet cook ground beef over medium heat 5 to 7 minutes or until browned. Stir in cumin, chili powder and salsa; simmer until heated through.
  2. Spoon beef mixture evenly into each tortilla. Top evenly with lettuce, tomatoes, onion and cheese. Serve with cilantro, salsa and sour cream (if desired). Serve warm.
