Ingredients

  • 2 ripe avocados, pitted, peeled, and sliced
  • 1/4 cup lime juice, divided
  • 2 tbsp. chopped cilantro
  • 1 tbsp. salsa
  • 1 1/2 cups salsa
  • 1 1/2 cups frozen small salad shrimp, thawed and drained well
  • 1 cup sour cream (1/2 pint)
  • 1 bag scoop-style tortilla chips

  1. For guacamole, mash avocados in bowl. Add 2 tablespoons of the lime juice, cilantro, 1 tablespoon salsa, and salt and pepper to taste; mix well. Cover and refrigerate.
  2. In separate bowl, combine 1 1/2 cups salsa, shrimp and remaining 2 tablespoons lime juice.
  3. Place tortilla scoops on serving platter. Fill each scoop with 1 teaspoon shrimp mixture. Top each scoop with guacamole and sour cream.
