- Preheat oven to 325°F. Lightly coat a 2-quart square baking dish with nonstick cooking spray. Set aside. In a large skillet cook and stir ground beef over medium-high heat until browned. Drain fat. Stir in beans. Set aside.
- Meanwhile, for sauce, in a small saucepan stir together tomato sauce, enchilada sauce mix and 1 1/2 cups water. Bring to boiling; reduce heat. Simmer, uncovered, 5 minutes. Reserve 1/2 cup of the sauce; set aside. Stir remaining sauce into beef mixture.
- Spoon half of the reserved sauce into prepared baking dish. Top with 4 tortillas. Spoon half of the beef mixture over tortillas. Sprinkle with one-third of the cheese. Repeat layers with another 4 tortillas, remaining beef mixture and another third of the cheese. Top with remaining tortillas, reserved sauce and cheese.
- Bake 20 to 25 minutes or until bubbly. Let stand 10 minutes. If desired, serve with lettuce, sour cream, salsa, and/or guacamole.
