Smoked Salmon, Tomato & Everything Butter Grilled Cheese



  • 8 slices Rye Bread
  • 8 tbsp divided Challenge Everything Snack Spread
  • 8 oz softened Fresh Goat Cheese
  • 8 oz Smoked Salmon
  • 1 sliced Large Tomato
  • 1/2 thinly sliced Red Onion,
  • 1 cup Arugula


Prep Time
15 minutes
  1. Arrange 8 slices of bread on a board and spread with Everything Snack Spread, about 1/2 tablespoon per slice.
  2. In a medium bowl, use a spoon to mash and mix remaining 4 tablespoons Everything Snack Spread with goat cheese until smooth and combined. Flip half the slices and spread each with goat cheese mixture.
  3. Layer each with smoked salmon, tomato, red onion and arugula. Top with remaining bread slices, buttered side up.
  4. Preheat a large skillet over medium heat. Carefully transfer one sandwich to the skillet, cover and cook until bread is golden, 3- 5 minutes. Flip and cook another 3- 5 minutes. Repeat with the remaining 3 sandwiches. Serve hot.
