Ingredients

  • 4 (10- to 12-oz.) T-bone steaks, 3/4-inch thick
  • 2/3 cup olive oil
  • 1/4 cup Worcestershire sauce
  • 1/4 cup mesquite seasoning
  • 3 tbsp. butter, softened
  • 1 tbsp. snipped fresh chives
  • 1/4 tsp. mesquite seasoning

  1. Place steaks in an extra-large resealable bag. In a small bowl whisk together oil, Worcestershire and 1/4 cup mesquite seasoning; pour into bag. Seal bag; turn to coat. Refrigerate 6 hours, turning occasionally.
  2. For the chive butter, in a small bowl combine butter, chives, 1/4 teaspoon mesquite seasoning, and salt and pepper to taste. Refrigerate until ready to serve.
  3. Coat grill rack with nonstick cooking spray. Preheat grill to medium (300F to 350F). Remove steaks from marinade; discard marinade. Grill steaks 5 minutes per side (145F for medium-rare) or to desired doneness. Remove from grill; let stand 5 minutes.
  4. Top each steak with 1 tablespoon of the chive butter, and serve.
