- Place steaks in an extra-large resealable bag. In a small bowl whisk together oil, Worcestershire and 1/4 cup mesquite seasoning; pour into bag. Seal bag; turn to coat. Refrigerate 6 hours, turning occasionally.
- For the chive butter, in a small bowl combine butter, chives, 1/4 teaspoon mesquite seasoning, and salt and pepper to taste. Refrigerate until ready to serve.
- Coat grill rack with nonstick cooking spray. Preheat grill to medium (300F to 350F). Remove steaks from marinade; discard marinade. Grill steaks 5 minutes per side (145F for medium-rare) or to desired doneness. Remove from grill; let stand 5 minutes.
- Top each steak with 1 tablespoon of the chive butter, and serve.
