Ingredients

  • 4 cups seedless watermelon cubes
  • 2 tbsp. extra virgin olive oil
  • 3 tbsp. fresh lime juice
  • 1 tbsp. red wine vinegar
  • 3/4 cup crumbled feta (3 oz.)
  • 1/4 cup coarsely chopped fresh mint, basil or Italian (flat-leaf) parsley

  1. Place watermelon cubes in a large bowl; set aside.
  2. For the dressing, in a small bowl whisk together oil, lime juice and vinegar. Season with salt and freshly ground pepper to taste. Pour over watermelon; toss gently to coat.
  3. Add feta and mint; toss gently. Serve immediately.
