Ingredients

  • 1 lb. ground round
  • 1 cup chopped onion
  • 1 can ready-to-serve creamy tomato soup
  • 1 pkg. fajita seasoning mix
  • 4 cups shell macaroni, cooked
  • 2 cups shredded Mexican cheese blend, divided
  • 1 cup halved cherry tomatoes
  • 1 can sliced black olives, drained

  1. Preheat oven to 350°F. Cook beef in a large nonstick skillet over medium-high heat to brown, stirring to break up. Add onion; cook 3 minutes; drain. Add soup and fajita mix; stir. Stir in macaroni, 1 1/2 cups of the cheese, and tomatoes and olives.
  2. Spoon meat mixture into a 2-quart baking dish. Top with remaining 1/2 cup cheese. Bake 30 minutes or until hot and bubbly.
