Ingredients

  • 1 lb. fresh asparagus, trimmed, cut in half
  • 1 small red bell pepper, seeded, cut into julienne strips
  • 1 tbsp. olive oil
  • 1/2 pkg. shredded carrots
  • 1 container refrigerated Alfredo sauce
  • 2 cups chopped cooked turkey
  • 1 pkg. linguine, cooked
  • 1/4 cup freshly grated Parmesan cheese
  • 1/4 cup chopped fresh parsley

  1. Heat oil in a large skillet sauté. Add asparagus and red bell pepper, cook over medium heat 5 to 7 minutes or until tender. Add carrots; cook 1 minute. Stir in Alfredo sauce and turkey; cook, stirring constantly, 10 minutes or until heated through.
  2. Spoon over linguine. Top with Parmesan and parsley, and serve immediately.
