Ingredients

  • 1 onion, chopped
  • 1 red bell pepper, seeded and chopped
  • 1 yellow bell pepper, seeded and chopped
  • 1 tbsp. olive oil
  • 1 tsp. cumin
  • 1 tsp. chili powder
  • 2 cans diced tomatoes with mild green chiles
  • 1 can puréed tomatoes
  • 1 container light chicken broth
  • 2 cups chopped cooked turkey
  • 1 can black beans, rinsed and drained

  1. In a large skillet cook onion and peppers in oil over medium heat 5 minutes or until tender. Add cumin and chili powder. Cook 1 minute. Add tomatoes and broth; bring to boiling.
  2. Reduce heat and simmer 20 minutes, stirring occasionally.
  3. Add turkey and black beans; cook 10 minutes. Ladle into individual bowls to serve.
