Ingredients

  • 1/3 cup olive oil
  • 1/3 cup red wine vinegar
  • 1 tbsp. Dijon-style mustard
  • 2 tbsp. chopped fresh parsley
  • 1/2 tsp. dried oregano
  • 3 cups torn iceberg lettuce
  • 3 cups torn romaine lettuce
  • 1/2 small purple onion, sliced
  • 1 cucumber, peeled and sliced
  • 2 medium tomatoes, cut into wedges
  • 1 small red bell pepper, seeded, cut into thin strips
  • 3/4 lb. thinly sliced turkey, chopped (3 oz.)
  • 1/2 cup kalamata olives
  • 1/3 cup crumbled feta cheese (1 1/2 oz.)

  1. For dressing, in a small bowl whisk together oil, vinegar, mustard, parsley, oregano, and salt and pepper to taste.
  2. Place lettuce in a large serving bowl. Add onion, cucumber, tomatoes, bell pepper, turkey, olives and feta; toss. Add dressing, toss to coat, and serve.
