Ingredients

  • 3/4 lb. extra-lean ground turkey breast
  • 2 tbsp. flax meal
  • 2 tbsp. finely chopped onion
  • 2 tsp. peeled, grated fresh gingerroot
  • 1 egg white, beaten
  • 1 tbsp. canola oil
  • 1 1/2 cups snow peas
  • 1 cup shelled edamame, thawed
  • 1 garlic clove, minced
  • 1/4 cup less-sodium soy sauce
  • 4 cups thinly sliced napa cabbage

  1. In a large bowl combine turkey, flax meal, onion, ginger and egg white; mix well. Shape into 12 meatballs.
  2. In a large nonstick skillet heat oil over medium-high heat 1 minute. Add meatballs; cook 8 to 10 minutes or until an instant-read thermometer registers 165°F, turning frequently. Transfer meatballs to a plate; cover loosely with foil to keep warm.
  3. Return skillet to medium heat. Add snow peas, edamame and garlic; cook and stir 3 minutes. Reduce heat to medium-low. Stir in soy sauce. Return meatballs to skillet; stir to combine.
  4. Place cabbage on a serving platter. Spoon meatballs on cabbage, and serve.
