Ingredients

  • 2 lb. lean ground beef
  • 1/4 cup bottled Italian salad dressing
  • 1 (24-oz.) jar marinara sauce with basil
  • 1/2 (14.5-oz) can diced tomatoes with basil, garlic and oregano, undrained
  • 1 (14.5-oz.) can French-style green beans, drained
  • 4 cups frozen mashed potatoes, thawed
  • 1 1/2 cups lowfat milk
  • 1/2 cup bacon bits
  • 1/2 cup bottled ranch salad dressing
  • 2 green onions, chopped
  • 2 cups shredded Cheddar (8 oz.)

  1. Preheat oven to 375°F. Coat a 3-quart baking dish with nonstick cooking spray. Set aside.
  2. In a large skillet cook and stir ground beef over medium-high heat until browned. Drain fat. Stir in Italian dressing, marinara, tomatoes and green beans. Bring to boiling; reduce heat. Simmer, uncovered, about 5 minutes or until most of the liquid has evaporated. Season with salt and pepper to taste. Transfer to prepared baking dish.
  3. Meanwhile, prepare mashed potatoes according to package directions using milk. Stir in bacon bits, ranch salad dressing, and green onions. Spread potato mixture over beef mixture in baking dish; sprinkle with cheese. Bake, uncovered, about 20 minutes or until cheese is melted and mixture is bubbly. Let stand 5 minutes before serving.
